Mushroom Soup (Vegan)

Mushroom Soup

Ingredients

500g Mushrooms

4 Spring onions

2 gloves of garlic

½ Lemon

Thyme

½ carton Alpro Soya Creme (Vegan) or 100ml Cream 

300 ml Veg stock

Plain Flour

Salt

Pepper

Cook

1. Put a little olive oil in to a pot, add the onion and garlic and fry for a while until soft.

2. Cut mushrooms thinly and add them to the pot. Let it all simmer until mushrooms are soft.

3. Squeeze in the juice of ½ lemon, add a teaspoon of thyme, salt and pepper.

4. Take pot off the heat and stir in 1 tablespoon of flour until its a thick consistency. Put back on the hob and add the vegetable stock. Leave it to biol.

5. Take it off the heat and add in the Alpro Soy cream.

6. Enjoy.
