Pumpkin Soup (Vegan)

Peanut Squash/ Pumpkin/ Sweet potato Soup

Ingredients:

1 tablespoon of coconut oil or olive oil

1 onion diced

2 garlic cloves mashed

½ teaspoon ginger

½ teaspoon nutmeg

1/2 teaspoon Cinnamon

salt

pepper

700g Pumpkin/ 800g diced peanut squash / 4 sweet potatos

400 ml vegetable stock

1 can coconut milk (light)

Cook:

1. Heat the coconut oil in a large saucepan

2. add the onion and garlic for 5-7 minuets

3. Add the remaining ingrediants bring to the boil

4. Reduce the heat simmer for 15 minuets and then blend.
