Potato and Leek Soup (Vegan)

Potato and Leek Soup

Ingredients:

4 leeks

4 garlic cloves crushed

4 Baking potatoes chopped

500 ml Vegetable stock

1 can coconut milk

Salt

Pepper

Cook:

1. Put a little oil in a pan, add garlic and leeks, cook until soft

2. Add in chopped potatoes, salt and pepper and fry for 3 – 5 minuets

3. Add vegetable stock and bring to the boil. Bring heat down and simmer for 25 minuets.

4. Blend and then put back on the heat and add the coconut milk. Let simmer for a further 10 minuets.

5. Enjoy.
